Do your kids go crazy for chicken nuggets (of any variety) like mine do? My oldest daughter would probably eat nuggets 3 times a day if I let her. We still grab the occasional order of fast food nuggets, but these are Mama’s nugget of choice lately.
I was inspired by this recipe. Sometimes I leave the chicken in tenders, other times I will cut it up to make actual nuggets.
Preheat your oven to 425°. First, coat the raw chicken pieces in greek yogurt. I just happened to have some with ranch flavorings in it that I used today, but I normally use plain.
While the chicken rests in the yogurt, grab a second bowl and mix together the Italian breadcrumbs, Panko, and grated Parmesan. One by one, dredge the chicken through the crumb mixture, and place onto a pan that is lightly sprayed with Olive Oil.
Spray the tops of the chicken pieces as well. Bake for 10 minutes, then turn each piece over and return to oven for another 8-10 minutes, until chicken is cooked through and breading is starting to brown. (For nuggets, you can shorten the second half of the cooking time as long as chicken is cooked through.)
Serve with your kids’ favorite steamed veggies and if you feel like it, thrown in a few homemade baked fries, as well. Hope your family enjoys these as much as we do!

1 1/4 lb boneless skinless Chicken breasts (Serves 5)
1/2 c 0% Greek Yogurt
3/4 c Italian breadcrumbs
1/4 c Panko
3 T grated Parmesan
Olive Oil spray
